Also called Foxtail or Tasselflower. The name Amaranthus once signified “unwithering.” This is a very old heirloom, a pre-1700 variety, that was very popular. These old fashioned, flowers have long, burgundy tassels of bloom with the texture of soft chenille. Amaranth was an important food crop for the Aztecs and Incas as well. In some parts of Mexico and the US today, the dried seeds are used to make candy, as you would oatmeal or porridge, or ground into a flour. Lovely in floral arrangements or landscapes.
