Fleshy, white tapered roots like Parsnip. 8″–10″ (20–25 cm.) x 2″ (5 cm.) diameter roots. Leaves are dark green, flat, plain deeply cut and are used like ordinary parsley. Culture: Deeply dug fine soil is needed. After weather warms, sow seed as you would any other root crop. Thinning is essential. Harvesting: Pick leaves throughout the season as needed. Roots at 100–120 days. Uses: For soups and stews. Roots can also be cooked as a vegetable. Nutrition: Leaves are rich in vitamins and minerals.
