First called “limestone lettuce,” it was eventually named Bibb lettuce in honor of John B. Bibb, a War of 1812 officer who, after the war, served in the Kentucky House and Senate. He created the lettuce sometime after 1865 but it was not commercially available until the early twentieth century. Produces soft, dark-green bunched rosettes with creamy yellow interiors. Popular for sweetness and tender texture.
