Harvest: Pick entire leaf stalk, or harvest only outside leaves so that new growth comes from center. Nutrition: Rich in vitamin A, iron and potassium. Preparation: Steam leaves briefly, add butter and salt to taste like spinach. Boil stems, serve like asparagus.
