Also known as edible Amaranth or Joseph’s Coat and Chinese Spinach. Thomas Jefferson included Joseph’s Coat, in a shipment of seeds to his brother-in-law, Francis Eppes, from Paris in 1786. Tall sturdy upright plants in tropical red, yellow and green leaves. Perfect decorative plant for any living room, office, or patio. The beautiful foliage in vivid combinations of yellow, scarlet and green are layered one on top the other on the stems of this sturdy, large-leaved annual. The leaves are sometimes harvested as salad vegetables.
