Romanesco is the preeminent Italian heirloom variety and was first documented in Italy in the 16th century. Its crisp, beautiful apple-green whorled heads impart an altogether pleasing, nutty taste. Most often enjoyed raw, the broccoli, if lightly cooked, will retain its flavor and unique texture. Culture: Start seeds indoors about 8 weeks before outdoor planting. Broccoli may be direct sown or started indoors about 8 weeks before outdoor planting. Harvest: When the first nice button or head has formed in the middle of your plant cut it off at 4″–7″. New ones will begin to form along the sides of the stalk. Nutrition: Especially high in vitamin C, riboflavin and calcium.
