The name of the pepper is taken from the city of Cayenne in French Guinea, from where the pepper originates and where its first documented uses were found. By the 1500s, cayenne pepper was one of the most priced spices around the world. This can be attributed to the Portuguese monopoly of the spice trade. Slender, long peppers turn bright red and are very hot.
