Also known as yellow squash, Crookneck is one of the oldest summer squash varieties in America, dating back to Colonial America. In 1807, Thomas Jefferson received seeds for the Yellow Crookneck from a Philadelphia Quaker. In Thomas Jefferson’s Garden book, he mentioned the Cooper family who for nearly a hundred years had preserved the heriloom squash in New Jersey. The squash has a buttery flavor and firm texture.
