Commonly known as pot marigold, but also known by a variety of common names such as Marigold, Goldbloom and Golds. While a member of the Asteraceae family, it has very little in common with the familiar French marigold. It is edible and was often used to flavor soups and stews. That is where its common name, pot marigold, originated. Calendula was often added to whatever was simmering over the fire. The golden yellow blooms were also used to add color to butter and cheese. The flowers make an interesting tea that is somewhat spicy and a bit bitter. Besides soups and stews, add to egg dishes, such as quiche or sprinkle the fresh petals on a salad. Even mix some into your favorite salsa for a little extra flavor. It attracts bees for pollination and keeps harmful insects away from other plants.
