Also called Wood Sage, Wild Basil, and American or Canadian Germander. Notable pollinators include long-tongued bees, hummingbirds, and hummingbird moths. Native to the Mediterranean area, this evergreen perennial has tiny little scallop edge leaves, like tiny oak leaves and deep pink flower spikes that are later in the season, blooming for 4 weeks, calling in beneficial insects. Germander herb plants are members of the Lamiaceae or Mint family, which includes lavender and salvia. It has seen use in Europe for centuries for inflammatory and digestive disorders. It has a pungent, bitter taste, and a camphor odor, and owes its bitter flavor to tannins once used as a bittering agent in beer before hops became the standard.
